I love stockings, too, Stephanie! Although in my own case I usually wear my high-heels barefoot. I tend to dress fairly casually.

According to my cupcake, my biological cupcake, who is from Mexico, is Irish, Native American and Spanish; and she is Dutch, English, French, German, Scandinavian, Scottish and Welsh. Thank you for the compliment, Stephanie! It's neat that you have an American ancestor, and that you like red hair. My mom is a redhead.

Regarding some tips pertaining to Tex-Mex cuisine, Stephanie, my signature dish is nachos supreme made with nacho cheese, seasoned ground beef taco meat, refried beans, sliced lettuce, chopped onions and tomatoes, sliced black olives, salsa, full-fat sour cream, and guacamole. It's my favorite dish. The reason I love it so much is because it combines all the great things found in meals: the hot and the cold ingredients, the soft and the crunchy, the meat and the vegetables, all smothered in wonderfully creamy cheese and spicy to boot! Mmm, yummy!

To make the nacho cheese (chile con queso), melt a one pound block of full-fat melting cheese such as Velveeta along with a 10 ounce can of Ro-tel in a double boiler (bain-marie). Don't add any milk or hot sauce to the cheese as they will tend to curdle it (in the case of the hot sauce, it's its vinegar that has this effect). If one desires to thin-out the cheese due to its water evaporating over time, simply mix-in more water to it while heating it. If one desires to make it hotter, then add chopped hot chili peppers or powdered cayenne pepper.

For the taco meat, I prefer the 0.3x fat-content by weight ground beef. If it's much leaner than this then it begins to taste like flavorless grit. I like to cook-up two pounds of ground beef for the taco meat per one pound of melting cheese. For the taco seasoning I typically use the packets of taco seasoning; I usually add more than is called for on the packets for a more intense flavor. I also add a good deal of salsa to the taco meat while cooking it up; as well, one can add black pepper and chopped hot chili peppers. Of course, add lots of iodized salt while cooking it, too. For a great deal more flavor and nutrition, don't drain-off the fat after frying it up. The fat is where it's at, whereas lean is way too mean!

If one wishes to make this dish much lower in carbohydrates, instead of using tortilla chips, use pork rinds for the chips and leave out the refried beans. The way to use pork rinds in this manner is to leave them on the side and dip them in or sprinkle some on top as one goes along, since they become soggy very quickly.

To serve it up, keep the ingredients separate and only combine them on one's plate in whatever portions and layerings one finds suitable. For me, if using tortilla chips, they go down first, then I add the rest of the ingredients in this order: meat, refried beans, lettuce, onions, tomatoes, cheese, black olives, sour cream, and guacamole. One can add sliced hot chili peppers for greater spiciness.

For an even cheesier experience, one can additionally use shredded block-cheese. I prefer New York extra-sharp Cheddar cheese for this. I put it down before adding the melted cheese, so that they meld into each other a bit.

Because this dish is quite messy, it's not really finger-food, so it's best to consume it with a fork. Bon appétit!

Jamie, I'm definitely going to try that recipe soon - even though there's a HELLUVA lot going on there, as you say! :D

Interesting that you have black olives in there, which I don't think I've seen in other Mex recipes I've tried: to me, black olives are ESSENTIAL in any pizza; I also use a lot of them in a 'Mediterranean Grouper' recipe I saw on YouTube, which is one of my very favourite fish recipes.
(which also uses green olives).

Speaking of green olives: a favourite 'appetiser' is green olives with serrano ham, fresh brown bread with cream cheese
(of course you can substitute smoked salmon for the serrano ham and you have another great favourite).

And do you like tiger prawns? Tiger prawns with red pepper risotto is another great fave (am about to stock up on them today!) :D
My internet time is limited but if you can find a similar recipe and copy and paste it in a post I'll suggest modifications in a future visit!

btw, on Adele's hair; I'm PRETTY SURE I have a wig - long wavy flowing wig that comes down to just below my shoulder blades - in that exact same blend of blonde!

I wouldn't know how they do it in Ireland, Stephanie, but in the States, black olives are common in Tex-Mex dishes, particularly in nachos with sour cream. You might be interested in the following history-laden cookbook on Tex-Mex cuisine:

Sounds good to me! I just polished-off quite a lot of pickled green Spanish olives with pimientos. Delish! I love strong flavors, both bitter and sour!

I'm almost the antipode of a picky eater. I quite enjoy many of the epicurean foodstuffs cupcake nature has found by her cruel mercy to offer. Regarding bitter foods, one such that I love is ultra-strong espresso, and Brussels sprouts are by far my favorite vegetable! I like them sautéed in lots of butter and salt!

Oh, that's another thing I love, is salt! So much so that I've sometimes been known to add food to my salt! Teehee!

The best espresso (i.e., the most intense and strongest) by far that I have ever had was from Perk Kafe in the Murray Hill area of this quaint little rustic town called Manhattan. It was next-door to the apartment building where I used to live, founded after I had already lived there for some time. The owner of Perk Kafe must have really done their market-research to figure out that I lived next-door, thereby ensuring success for their new business--because, as we know, I adore super-ultra-strong espresso, and it's hard to come by (i.e., to the level of Perk Kafe). Oh, a long time ago I already thought-up a fast-food restaurant business that would basically have a license to print money. I call it LowCarbo, a ketogenic restaurant. The basic idea behind it is that one could gorge oneself there on any mix of the items and still lose weight. We'd have low-carbohydrate pizza (wherein the crust is made with cheese), low-carbohydrate Tex-Mex (such as my nachos supreme with pork rinds), etc., and it'd all be mind-blowingly meaty, cheesy, creamy, salty, rich and delicious! Further, we'd have low-carbohydrate adult beverages served there, such as peaty Scotch, including by drive-through! (And the all-night establishment Drive-Through Handguns would be right next-door! Not to be confused with Drive-Through Handguns & Liquor, which is in the town next over.)

Though the problem with all that, Stephanie, is don't you know that it would only be a matter of time before the government comes along to spoil our fun? Oh, yes. The reason being is because it would be such an intense culinary experience that people would be seizuring before they even made it out the front door, just from the divine smells wafting from the kitchen! Well, get enough ambulances called to your establishment and you just see how quickly it gets the local nabobs ruffled.

So I concluded that it would never work.

You see, folks, the government is the reason we can't have any fun.

The album Liquor in the Front is subtitled Poker in the Rear (of which subtitle appropriately appears on the back of the CD jewel case). The reason the casino establishments do it that way is because they want a person liquored-up before they play poker. That way they will be off their game and bet more than they otherwise would have, thus increasing the casino establishments' rake. Such has not escaped the notice of Mr. Rev. Heat.

btw, I've just made a lovely soup I'd never even tasted before: Italian lentil soup with tomatoes! Minestrone has always been one of my favourite soups but even the best minestrone I've ever tasted is only 'in the ha'penny place' compared to this: ab-so-lutely gorgeous! :D
(I'll definitely be making more of it; I don't know whether puy lentils is essential to the taste - or whether the lentils I used are gen-u-ine puy lentils - but it tastes more than good enough to me!)

That wig was one of three I bought from an Ebay Las Vegas supplier, about 10 years ago; another was a classic 'Marie Antoinette' style which I also love wearing; the other is a light brown/blonde in an 80's big-hair style!
